Mackerel pate
Smoked mackerel has been used for pate for many years - and it tastes good! But smoking of fish and meats may increase the risk of cancer of the stomach.
1 mackerel
2 lemons
1 tbsp olive oil
or 1 tbsp mayonnaise
Salt
Pepper
Louisiana hot sauce
Mackerel is an oily fish, which makes it good for the heart, and good for pate making.
Filet the mackerel (or buy it filletted.)
Wrap the filets in tinfoil with the juice of 1 lemon and salt and pepper. Bake in a 375 oven 20 minutes.
Allow to cool.
Take off the skin, remove the meat, flake the meat check for small bones.
In a medium bowl mix the flaked fish, juice of 1/2 lemon, salt, pepper, hot sauce to taste and 1 tbsp mayonnaise or 1 tbsp. olive oil.
Mash with a fork until pate is formed.
Can be mixed in a food processor if you want to save time.
