Seafood soup
Serves 2 as a full meal.

This is an excellent and tasty way to make a meal in which ALL the ingredients are heart-healthy.
We use farm raised atlantic salmon because it has less of a fishy smell than wild salmon.
1 fillet Atlantic salmon
1 fillet Snapper or halibut
(or other white fleshed fish)
12 medium shrimp - shell on. (Shrimp flavor is in the shell).
1 large onion
1 carrot, sliced
1 stalk celery
1/3 cup white wine
1 cup water
4 tablespoons of olive oil
(Not extra virgin - too much olive flavor overpowers the fish.)
6 cloves garlic crushed
juice of 1 medium lemon
(We find that organic lemons have more flavor).

Heat the olive oil in a large skillet to medium heat. Add the garlic and fry for 1-2 minutes. Do not allow the garlic to brown or burn - it adds a bitter flavor.
Remove the garlic and set aside for later.

Add the shrimp. Sautee for 2 minutes until pink all over. Remove shrimp shells.
In a separate small pot boil the shrimp shells in 1/2 cup water for 5 minutes. This will be added back to the soup to add shrimp flavor later.

Add the onion sliced in rounds to the bottom of the skillet. Allow to sautee gently. Add sliced carrot on top of the onion. Add sliced celery over onion. Layer fish on top of vegetables.
Add wine and 1 cup water, and water from shrimp shells. Discard shrimp shells.
Cover and simmer 10 minutes.

Seasoning Salt and pepper to taste.

Make it Italian: add Italian herbs:
dried basil, dried marjoram, dried oregano, dried sage.
Make it French: marjoram, thyme, rosemary, fennel, savory, basil, parsley and lavender
Make it Caribbean: Any or all of: Allspice, Ginger, Habanero Chile, Cinnamon, Nutmeg, Garlic, Onion and Thyme.
Make it hearty: layer 2 medium patatos sliced above the carrots and below the fish.
Make it breast-cancer healthy: Add a broccoli stem at the same time as the carrots. Remove the hard skin. Cut in pieces 2-3 cm by 1 cm.
Serve: Put the shelled shrimp back in the soup. Serve in individual soup plates, or place the skillet on a trivet on your table and allow each person to serve him/herself.
